AVOCADO NUMS

INGREDIENTS

serving size 1

1 avocado per person 1 inch piece of cucumber, diced

1 inch piece of raw zucchini, diced

1 tbsp dill, chopped

1⁄4 bell pepper, diced

2 tbsp basmati rice, cooked (day-old rice is fine!)

A squeeze of lime juice

  • Halve the avocados and discard the pits. Scoop out a little of the avocado flesh to make the hole bigger.
  • In a separate bowl, combine the raw ingredients with the cooked rice. (You can add in anything you like at this stage: roma tomatoes, chickpeas, cilantro (cilantro), shredded carrots, garam masala or turmeric, hemp seeds, tiny pieces of chopped firm tofu, peas, green beans, olives, name it!)
  • Spoon your salad mixture into the avocado, and serve with a spoon. Num!!
